Passover Mandel Bread
My mother-in-law always makes a great meal for the Jewish Passover holiday. She makes a wonderful Mandel Bread (similar to Biscotti for those of you unfamiliar with Mandel Bread). Here is her recipe:
Ingredients
- 1 cup sugar
- 1/2 cup oil
- 3 eggs
- 1 cup mazoh cake meal
- 1 cup potato starch
- 2 teaspoons orange juice
- 1/2 cup chopped nuts
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
Preparation
Mix sugar, oil, eggs and add nuts.
Add orange juice and dry ingredients.
Chill 3 strips in regrigerator 2 hours and then make 3 rolls (about 2" thick).
Sprinkle with sugar and cinnamon.
Cook and slice and return to oven to brown (3-5 minutes).
Cook in greased pan in oven at 350 degrees Fahrenheit for 40-50 minutes.
